Spinach and Rice Balls

As promised, here is the spinach and rice ball recipe. I'll give you the link to the original recipe, the blog I found it on is here. Below is how I do it:



Here’s the ingredients/directions

2 Cups cooked rice (I use long grain white rice)
Spinach (4-5 oz or as you see fit more is good too)
1 clove Garlic (I use 2 -3, chopped up or pressed) mmm
2 eggs
½ C bread crumbs
½ C mozzerella cheese (I use fat free)
Salt, pepper to taste (I add Cayenne too)
1 tbsp olive oil

Preheat oven to 350.
Cook garlic and spinach in olive oil until spinach is watered out (no idea what that means, I just cook it until I think it’s good. Nice and wilted)
In a large bowl mix, rice, eggs, bread crumbs, cheese, salt and pepper.(and Cayenne)
Then add spinach/garlic to rice mix and combine.
Let Cool.
Form into balls. (supposed to be about golf ball size so you can make more, but I make mine larger so it yields about 9-10 for me) Bake 18-20 minutes or until browned.

It’s a bit messy. I found that forming the ball in one hand and using a spoon to help in the other is less messy and easier.

Healthy Healthy Healthy (Or at least trying to be)



Last week wasn’t a good week for working out. I was busy over the weekend and it carried into the week and I became a bit lazy on that front. But I’m back on track and happy to be. Bill has started working out as well. I’m excited for this, not because I think he needs to, but I’m happy to have a buddy. We are doing our own things but working out in the same room. I’ve got my Fitness Blender routine and he’s doing his thing. I told him that having him there working out keeps me motivated. If he’s doing his, even if I don’t want to do mine, I do it. If he’s sitting on the couch or in the other room I’m more inclined to want to skip my workout and cuddle up with him. Him doing this “with” me helps me to stay on track.
I’ve heard that working out with someone rather than alone is better. It keeps you motivated and you have someone there for encouragement. I definitely need that motivation some days.

Ok, so along with working out I’ve been trying to eat better as well. Make the better choices. Avoid the chips and soda and all that junk. For me, my biggest weakness is fast food. I don’t really eat sweets, no cake and candy. I like that stuff, but it’s never been an issue for me. It’s fast food. That devil! Portion control is also a problem! You get hungry and you eat more than you should!
I started using MyFitnessPal app and website a couple of years ago. It helped me lose about 15 pounds…of course I gained it back! I’m using it again to help me stay on track. With that I’ve been trying not to eat out. It happens, it does. We forget to take something out, something happens and we don’t have time to cook. Trying to limit this. Of course there will be days where I’ll indulge. The good thing is I’ve started to find things that I like that are healthier, that aren’t crappy food. I’ve started making rice and spinach balls for lunch during the week, for days I don’t have leftovers. I love these things! I’ll provide the spinach ball recipe in another post. I’ll warn you, you may think they are a little bland, the blog I got the recipe from said to dip in marinara. I personally like them just fine, no dipping. I of course add some cayenne for heat. I also make mine larger so it doesn’t make anywhere near the 2 dozen this recipe claims. But it works for me.  I can get 2-3 lunches out of it, which is perfect. And I love them, they are so good!

A healthy snack I’ve fallen in love with is celery and cream cheese. Wait, what?! Cream cheese? Yes cream cheese! I’ve been using Lucerne Greek. It’s a cream cheese and Greek yogurt blend. Tastes just as good as the regular stuff and it’s low calorie. I don’t even like celery that much, but this I could eat all day! A few sticks and a little bit of the cream cheese and I’m good to go!

One thing I find that I love is chicken. We don’t have a grill at the apartment. (we could get one and keep it down near the pool, but we haven’t just yet) Instead we’ve been cooking the chicken in a pan. It’s amazing. My mouth waters thinking about it. Comes out nice and juicy! Bill does it perfectly. He cooks it in a little bit of butter, about 1 maybe 2 tablespoons for 2 good sized chicken breasts. Seasoned with a little bit of salt, some pepper and cayenne. (We like our cayenne!) It has seriously become my favorite thing ever! It’s so good! Try it! You’ll love it too. We usually pair this with white rice and green beans. I’d eat this every day!

We are  trying to cook as much as possible and eat as healthy as we can.

Financial Stability



When I was younger, just starting out as an adult, I had no idea about money or credit. Not a clue how to be responsible with it. I’ve had a job since I was roughly 15. As soon as I turned 18 and graduated high school I got a full-time job. I’ve been fortunate enough to have one ever since. What I haven’t had until recently, the last roughly 6 years was responsibility for my money and credit. I’ve fought and uphill battle that I’m continuing to fight to get my credit and finances straight. Not all of my struggle has been my fault but some of it has. I did stupid things like open credit card accounts when I was 18 and then was unable to pay them back. If you aren’t taught or don’t do the research you don’t realize how these things can affect you later in life. I learned that the hard way. I’m working my way out of debt and keeping my school debt as low as possible while I finish. I’m working my credit score up. All these things so that my life can be easier when I want to buy a house or get that better job. Yes, my credit history has come into play at work.

There is so much I wish I knew just 10 years ago getting out of high school. It’s so important to be smart with your money and your credit. It’s a parents responsibility to teach that to their children. I also wish schools did more with this and taught kids more about money and their credit. It’s just so important. You don’t think about that, or at least I didn’t, when I turned 18 and offers were coming in the mail. I hope to pass the struggles I’ve gone through and what I’ve learned and continue to learn on to any kids I may have, our girls and my niece and nephew. It’s just so important, I can’t stress that enough. If you have kids I hope you are planning and preparing them when the time comes. I know people aren’t always comfortable talking about money, but this is something that needs to be addressed and discussed.

New Program



Doesn’t look like I’ll be on here daily like I’d hoped. Just ain’t happenin! But I will  try and update the progress every couple of days.
So…Finished my last workout of the week on Thursday. I should’ve done workouts on Saturday and Sunday, but unfortunately I had very busy days and didn’t get to them. Didn’t take the time like I should have. Shame on me!

I did have a  great weekend though. The girls came over Friday. Liv only stayed for dinner because she had a girl scout camp-out to get to early Saturday morning. We did get Soph for the night an all day Saturday. She had a birthday party Saturday that we stayed at for all of 15 minutes. She pulled a Sophia and closed up. Too many people she didn’t know and so she was uncomfortable. She later told us that if it was one adult and just kids she would’ve been ok but there were too many adults, which meant too many people for her to be comfortable around. I don’t blame her, she couldn’t even tell me which kid was the birthday kid. Apparently she was invited through girl scouts and said she didn’t know anyone there except for her best friend. By the time her little friend got here it was too late, not even that could compel her to stay. I don’t know why her and her sister clam up like this. They do it all the time, even around family. But other times they don’t stop talking. If it’s just us they are loud and crazy and funny but as soon as you bring other adults in the room they get “shy.” Hopefully they’ll grow out of it as they get older. It’s frustrating at times but they are still young enough to get a pass most times.

Sunday was a long day as well! Took my niece to the Aquarium of the Pacific for our annual birthday trip. It was a little early as her birthday is next month but I wanted to get it in! Every year we go somewhere just the two of us. I was excited myself as neither of us have ever been. Marine life fascinates me so I was very excited! However a bit disappointed. Not to say that the aquarium is anything bad, but I was hoping for more. Not sure what I expected but I was hoping it was bigger I guess. I’m conflicted because on one hand I love being able to see the marine life but I hate that they are confined to small cages often. Especially the bigger animals like the seals and sea lions. These big animals  confined to such small spaces. It’s sad. We did get to see some animals outside of the aquarium. We took the whale watching tour. That was very cool. We saw dolphins and whale. Can’t remember what kind however. But it was amazing and beautiful. Just awesome! Ariana truly enjoyed that! And in true Ariana fashion she found a friend to hang out with on the boat ride. Happens every time. No matter where we go she finds someone!

Yesterday I bought a fitness program from Fitness Blender. It’s a 4 week program only $7. Can’t beat that. I understand that yes, there videos are free online, whether it’s on their website or on YouTube. BUT, this program will tell you which videos to do which days and will get you results. And again, for $7 why not. I’m already working out to their videos so I figured why not change it up and see if this works. Plus once you buy a program you have it forever. I can recycle it and do it again. Which I plan on doing. Do it for 8 weeks. I’m confident this will be good!

W.O. #4



Workout complete last night! (Yes this is #4...and yes...it's been a week between this and #3...I know....I know...slacking already! Not happening again!)
Jumped onto YouTube and did two Fitness Blender workouts. I did the quiet cardio (low impact) and the ab boot camp workout. As I continue to realize I’m out of shape and not going to be able to jump right into something more advanced I find these really kick my butt. I’m back at beginner level. But that’s ok, it’s what happens when you go as long as I have without working at working out. No workout today as I’m donating plasma. My plasma days are going to become my rest days. If I want the results I’m looking for I have to suck it up and do this 5 days a week. I’ll have to get up and do it on the weekend. Which really isn’t so bad. I don’t do much anyway, what’s an hour out of the morning! Here’s to keeping moving and pushing on to make this a habit!
